Try this chicken recipe at home

The following recipe was provided by Giovanni Coppola, chef at Pizza Amore in Winchester.

Chicken Sorrentino

2 chicken breasts

2 tablespoons butter, divided

Salt and pepper to taste

10 leaves parsley, chopped

3 leaves basil, chopped

4 ounces heavy cream

Splash brandy

1/2 cup mushrooms, chopped

2 large slices eggplant

2 large slices ham

2 slices fontina cheese

In a skillet, heat 1 tablespoon of butter on medium until melted. Add salt and pepper, parsley and basil and combine. Add in chicken and saute until cooked all the way through.

Make the sauce in a separate small skillet by sauteing the 1 tablespoon of butter and mushrooms on medium heat until butter melts. Add splash of brandy and then heavy cream.

When the sauce is boiling, add the chicken mixture. Top each chicken breast with a slice of eggplant, ham, and fontina cheese. When the cheese is melted, the dish is done.
